
As per Indian tradition, all family members Come together to celebrate Raksha Bandhan. On this occasion sister prepare pooja thali for her lovable brother. This Special festival we celebrate for brother and sister, Sister tie Rakhi to our lovable brother’s hand for his safety. As per the hindu mythology Raksha Bandhan is about worshipping Varuna. We also prepare sweet food for the day. As per Marathi Calander it is known as “ NARALI PURNIMA.” We prepare especially coconut sweet on this days , Like , Coconut karanji, Coconut laddu, Coconut sweet Rice. Now giving your recipe for Coconut Karanji
Recipe for Coconut Karanji:-
Desiccated coconut or fresh grated Coconut:- 1 cup
Sugar :- 1/2 cup
Dry fruits :- 2 Tbs
Wheat Flour :- 1 Cup
Water :- ½ Cup
1 tsp pure ghee
Salt to test
Oil to Fry
Procedure :- Take Pan and add coconut , sugar and cook for 5 to 7 minutes on medium heat. All mixture should be thick in consistency. Add all dry fruits in that.. This is inside filling of Karanji,
Take Wheat flour , add 1tsp ghee and add water and salt to test in that and make medium dough. Cover this dough with wet cloth and keep aside for 15 Minutes.
Take dough after 15 to 20 minutes & make s small ball from this dough.
HOW TO MAKE KARANJI,
Take one ball of dough. Make a small round chapatti or make thin disc. Now put spoonful of coconut filling on one half of the disc. Apply very little milk or water on the edge of half disk . Now fold the other side of disc over the mixture and seal nicely.
Now take karanji cutter and cut excessive dough with this. Do not cut very close to stuffed coconut filling otherwise karnaji will get open and will not able to fry this.
After making karanji, now time to fry this. Heat oil in to pan and deep fry the karnaji till it golden brown. Now dish is ready to serve.
